Maruca Dinsmore and husband David live in La Peñita Nayarit in a beautiful home on a small rocky bluff overlooking the ocean. They met in the La Peñita RV Park many years ago, married and moved to their house just beyond the border of the park.
Yet she visits almost everyday she is in town, either to play volleyball or as a guest to one of the many parties. Maruca is an elegant hostess and friend. She is also known as the Bird Lady of La Peñita and is “Mom” to a variety of beautiful parrots, cockatiels and other exotic birds.
This recipe was given to me in the fall of 2004. It continues to delight my family and guests.
